One of the oldest traditions of Northern Albania is Maze.

Maze was prepared to welcome an honoured guest into the family home. Rather than a single dish, it was a collection of homemade foods served before the main meal. In its traditional form, it included corn flour prepared with tlyn—clarified butter made from the cream of fresh milk—together with local cheese, homemade butter, seasonal vegetables and other products prepared by the family. It was a simple but meaningful expression of hospitality.

Another symbol of Albanian mountain cuisine is Fli.

Prepared layer by layer over a slow fire, Fli was traditionally placed in the centre of the sofra, where family members and guests shared the same tray. A bowl of fresh sheep's yoghurt was often served alongside it, turning a simple meal into a moment of togetherness.

The Albanian Alps are also known for their excellent dairy products. Fresh white cheese, homemade butter and yoghurt have been part of everyday life for generations, produced by local farming families using traditional methods.
